Basic indregients and items for baking cake

I love to eat cake… Carrot cake is my favorite… Chocolate cake is my most favorite… cheese cake I am speechless… Back home every corner there will be one cake shop… Kampar the place I grew up… A small town but there are four or five shops… Honey cake house… Honey star cake house… Annie cake house… Butter cake house… so many… In the city… Secret recipe is our famous meeting spot… their carrot cake is marvelous… it has been a habit of having cakes with tea or coffee…

My son loves cake as much as I and his father does… When we were young… amma used to bake cake… I and my brother will be waiting for her to pour the mixture in the tray for baking… We would fight for the balance in the mixing bowl and on the spoon…

One of the best baking experience is when I was studying in Ipoh  and staying at uncle Nookiah’s house at Silibin… The Summer Road house….we had wonderful time… I, Suja, Peria, Vilas, Usha and Satia and kutty Parveena… Imagine when the house is full of girls like us… We had fun… Peria bakes very good chocolate cake… don’t know if she still does…and I love chocolate cake…we would chip in money and buy the ingredient and make a mess in the kitchen…Those were the good times… Still fresh in mind…

Since I came to Perth missing home and craving for cakes has developed an interest for baking in me… My friend Kamal’s wife, Indra is good in baking cake… Once when they came down from Adelaide… Indra thought me how to use the electric oven here and also how to bake… we baked a cake… that was my 1st cake baked… I was so happy… It came out well and tasty… Since then I started baking… Every time a cake is baked I feel so proud and another achievement… haha… Thanks to Indra… The decoration on the cake can be anything… The taste that matters for me…

Here I would like to share few very simple and quick cake recipes…

Chocolate Cake with chocolate icing

Chocolate cake

Ingredients

125g Butter

3/4 cup Caster sugar

2 Eggs

1 Tablespoon Golden syrup (optional)

1 teaspoon Vanilla essence (I always almond essence)

1 cup Milk

1 1/2 cups Self raising flour

2 tablespoons Cocoa

Steps

1. Turn oven to 180 Celcius (350 F)

2. Grease the tin or line the base of tin with baking paper

3. Beat Butter, Sugar, Eggs till smooth and creamy

4. Stir in Golden syrup and Vanilla

5. Mix in milk

6. Stir in Flour and cocoa. Mix well

7. Spread evenly in tin. Bake 45 to 55 minutes.

Butter cake

Ingredients

3/4 cup Caster Sugar

1/3 cup Water

125g Butter

1 teaspoon Vanilla essence

3 Egg yolks

1 1/2 cups Self raising flour

3 Egg whites

Steps

1. Turn oven to 180 Celcius (350 F)

2. Grease the tin or line the base of tin with baking paper

3. Put Sugar and Water in small pan. Bring to boil and set aside to cool

4. Beat Butter, vannila, Egg yolks until smooth

5. Add Sugar and Water mixture slowly. Mix it well

6. Sift in the flour. Beat it well

7. Beat Egg whites till stiff. Fold in to the mixture

8. Spread evenly in tin. Bake for 40 minutes

Damaged Vegetarian cake... covered with deco... haha... The taste that matters

Vegetarian Cake

Ingredients

1 1/2 cups Self Raising flour

3 Tablespoons cocoa

1 cup Caster sugar

1 cup Water

1 teaspoon Vanilla essence

1 tablespoon White Vinegar (sometimes I will skip this)

1/2 cup Vegetable Oil

Steps

1. Turn oven to 180 Celcius (350 F)

2. Grease the tin. Dust the inside of the tin with a little flour

3. Put Flour, Cocoa, Sugar and Water in a bowl

4. Add Vanilla, Vinegar and Oil

5. Mix it all together with a spoon (Use mixer with low speed)

6. Pour into the tin when smooth

7. Bake for 35 to 40 minutes

Tips

  • Do not open oven to check at least for the 1st 20 minutes.
  • Let the cake cool for 5 or 10 minutes before taking it out the tin
  • Do not be sad if it didn’t turn out well or broken
  • Practice makes perfect… keep trying…
