7th October is Prajish Sankar’s birthday and my dear cousin Rajaram’s birthday too… Prajish is the main reason Ambbi Says exist… Rajaram is my best perima’s son… he is more a friend then thambi to me… Yeah I have two great reason to bake today… I just bake and eat on behalf of them… PS will have fun of course… Happy Birthday Boys… opps MAN…

Flipped my Everyday Muffins and Bakes (a collection of over 100 essential recipes)… Cappuccino squares looks good… All the ingredients are in my kitchen… Easy and simple recipe… Butter, flour, cocoa powder, sugar, coffee and 4 eggs… mmm that’s a lot… Anyway Navarathiri starts tomorrow and I have to finish up the eggs in fridge… If not PS will give a reason to eat eggs… Navarathiri is the only 10 days he will be vegetarian…

Cappuccino Squares

225 g/8 oz Butter

225 g/8 0z Self raising flour

1 tsp Cocoa powder

1 tsp Baking powder (I never use for any baking)

225 g /8 0z Caster sugar

4 eggs Beaten

3 tbsp Instant coffee powder (dissolved in 2 tbsp hot water)

Steps

1. Grease the tin and turn on oven 180 Celcius.

2. Sift the flour, baking powder and cocoa in a bowl.

3. Add butter, caster sugar, eggs and dissolved coffee.

4. Beat well until smooth and spoon it into the tin.

5. Bake for 35 to 40 minutes.
