Coconut bake… 4 Ingredient only…

Good day all… Posting after a long time, so let’s start with a simple recipe… This is an easy egg-less evening tea treat… Takes less than 5 minutes to prepare… Alright let’s bake…

Ingredient

1 cup Desiccated coconut

1 cup Caster sugar (reduced to your preference) I use brown sugar

1 cup Milk

1 cup Self raising flour (Plain flour + 1 teaspoon Baking soda)

Method

1. Add all ingredient in a bowl

2. Stir to combine

3. Bake for 40 minutes at 180 Celsius

Good day all… Oh yes I am still here… It has been more than a year, 15 months actually, since my last posting. I was away for awhile… Away from my laptop, not from baking or eating… Over the last one year, I have baked few easy and quick recipe cakes… Those who follow my previous postings would probably know me well by now… I am lazy in a way, hence will find the simplest baking method and ingredients… Alright let me stop this introduction note about myself and start with today’s baking…

Egg-less Orange cake…

Good day everyone… Hope all keeping good… I know, posting a recipe after a long break. Not that I haven’t been baking, my oven never rested, neither do I… It just slips my mind that I have a blog (not so great one anyway) and I share my recipes there. To anyone who follows Ambbi Says (probably non) please accept my sincere apologies. I have been occupied with studies and work placement. Saying that, I am taking this opportunity to share my experience while doing practical for Social Work degree. It was an amazing place with wonderful people too. Everyday of the three months seems very new and immense amount of learning scope. We basically worked with children and youth in need and at risk. I fell in love with the job. I have to say it was also because of the generous time and effort the staff and management there put into training a new person to be able to use the skills they have in work force, outstanding.

Egg-less Chocolate Moist Cake….

27th January… Happy birthday to our dearest brother Novinthen…

Certainly gives me a reason to bake… Addicted to this egg-less chocolate moist cake lately… This is on my favorite list now…Baked it last week when family was here… Meera simply enjoyed it and reckons she would migrate to Perth just for the cake… Jayshraj as usual loves the chocolate ganache on it… We do not need egg as well as butter for this recipe… White vinegar does the trick… Of course the olive oil gives the extra moist and yummy taste…

Wholemeal mixed fruit bread… Eggless…

Hi friends…

Posting a recipe after 6 months… That’s a long gap, I know… Not that I haven’t been baking… just didn’t get time to post it… Occupied with final semesters and  travelling home… Yeah I was back home for at least 3 times in the last 6 months…

Alright now let’s start with the most easiest and quick recipe… Mixed fruit bread… Healthy, less sugar, easy to bake and tasty… It is ideal for vegan too… Egg-less… I actually altered the initial recipe for a healthier choice… I used whole meal self raising flour instead of plain self raising flour and for the dried fruits try to get some cranberry or sugar less mixed fruits… Let’s start baking….

Avocado Pound Cake…..

After a long gap… I have been occupied with studies and work… Juggling time with assignments, exam preparations, work, volunteer and of course flying home on every little break I get… It has been a long hectic year… My last post was July 2012… Not that I haven’t been baking or cooking or doing any other exciting stuff apart from books and job… Well I just didn’t get the time to sit and write…  Today I decided to spare a little bit of my time to post this interesting recipe… Healthy too… Whilst sitting in the house preparing for exams next week, two important things I do when I need a break… Baking and eating… Moreover it’s winter… got to keep the house warm with my stove… 🙂

Sugar Capati… Fun

Capati is healthy food… It is made with Atta flour, wheat product… Atta flour id a mixture of the Endosperm and bran of wheat kernel… Atta is Hindi word for dough… Atta flour is available in most Indian groceries…

I like to eat capati with sugar… Yes absolutely not healthy 🙂 I got to say it’s really yum and a good one for sweet loving people…

Easy Tandoori Chicken

Jayshraj is in Perth… He is going to be here one or two months until the paper works are all done… Cooking for him is the most challenging task to do… Amma and Meera pampered him a lot… He is very choosy on what he eats… Chicken almost everyday and spicy flavored ones… I am not a good cook but I love to learn… I need to cook like amma so that he doesn’t miss home much… Amma is definitely a great cook… Well I believe anything cooked with love and care would be tasty…

I decided to do tandoori chicken in oven… Jayshraj enjoyed it… Try it kids will sure love it…easy and quick recipe… I am a little bit bad in measurement when it comes to Indian cooking… Just go by the taste and few trial and error… Bare with me 🙂

Tiny chocolate cupcakes with ganache frosting for Jayshraj’s 9th Birthday…

28th April is Jayshraj’s 9th birthday… I am missing it again this year… Heart breaking however I want my baby to feel my presence there with him… I am helpless here yet I could do my best to make him happy… Jayshraj loves chocolate cake… His father is going back for his birthday this year after 6 years… It is not nice at all to be away from family… Baking and studies keeps me closer to myself and get away from this loneliness… Yeah let’s bake… 🙂

Dark Chocolate Brownie….

It is Sunday… Got up in the afternoon after an over night shift… 3 assignments pending… too much to read and catch up… made fried rice… the quickest lunch I could think of… Started with assignments… Something knocked on my head… hey it’s Sunday get a life… There came Reena as usual the “monster” with Jee, friend visiting Perth from Malaysia… Obviously there is a reason to eat… What’s for tea… Yes it’s baking time…

Flipped the book for a quick chocolate recipe… MKR (My Kitchen Rules) is really another “devil”… eat eat and eat… Dark Chocolate Brownie is on the making now…
