Looks like baking is becoming a very great way to keep me relax… yeah everytime I feel home sick and lonely… I think of something to bake or cook… haha everytime a cake or cookies pop up in my post means I am bored and a little bit sad… It is said to cheer up yourself… cheer others… 🙂

Novin is another reason I always get home sick…tempting me with all his daily lunch and dinner at the best restorants in KL… Wait till I come home and make him pay for all my dinner and lunch…

After night shift I normally can’t sleep long… and home alone… How much books I can read… That’s when you really feel like going home… Miss amma and sisters… Jayshraj is getting busy now… with his school and all the extra classes… Funny when he says… I don have time even to play… How can I speak to you Ambbi amma… haha

Lucky thing World cup and SBS is keeping me company…  Tonight is England and Slovenia game…and not want to miss the Socceroos playing this morning… What shall I have to keep me awake… cookies or cake…

Flipped through the new recipe book I bought… Yeah Shortbread…. looks nice and easy…

As usual PS enjoyed it with his hot coffee… Waiting for Prajish and Chritina to come and join us for all these tea time bakings…

Ingredients

115 g/4 oz Plain Flour

55 g/ 2 oz Corn flour

55 g/ 2 oz Caster Sugar

115 g / 4 oz butter, diced and soften

40 g / 1 1/2 oz Plain Chocolate chips (can also nuts)

Steps

1. Stif the flour and cornflour into a large mixing bowl. Stir in the sugar, then add the butter and rub it in until the mixture starts to bind together.

2. Evenly press the mixture in a greased tin. Prick the surface with a fork.

3. Sprinkle with chocolate chips and press them lightly into the surface. Chocolate chip can be replaced with nuts or just leave it empty.

4. Bake the shortbread in a preheated 160 Celcius oven for 35 – 40 minutes.

5. When its cooked, mark into portions with a sharp knife before it cools down and hard. Let it to cool and serve.
