Recently at work we have started a routine, every Friday 3pm tea time just to embrace the week. My work colleagues are adorable. Everyone brings in something to share and we call it a feast. I must admit it has been a challenge as we have varieties of diet that we have to look out for. Among us, we have lovely Sam, who can only have gluten free food, one with allergies to corn, yes you read it right, corn and bacon actually and of course the easy ones who can eat all. Opps I almost forgot the fussy Indian lady who is a vegetarian and she doesn’t eat egg either. Yes that’s me and I know many have convinced me that egg falls in the grey area and my least favourite colour is GREY. So that’s me.

Ok let me share something about my lovely workmates, they celebrated my birthday with balloons and cakes, it was amazing. I walked into the office to a surprise, blessed I am to be loved this much. Oh dear when will I stop telling all these short stories in the midst of another. Let me continue with the cake story.

So there we go every week, will be a fun challenge if we could cater everyone’s pallet and tummy. This recipe is easy to make and of tasted yummmm, well that’s what my friends said as I didn’t have it, contains egg. I might try doing it with egg substitute soon but now here we go, the recipe. Enjoy your cake and take pride in your baking.

Ingredients

Almond and coconut cake

200g Butter

4 eggs

1 tsp. Vanilla Essence

1 1/2 cups Almond Meal

2/3 cups Desiccated Coconut

1/4 tsp. Salt

1 1/4 cups Caster Sugar (I use 1 cup of brown sugar)

2 tbsp. Flaked Almond

Method

Melt the butter

Beat butter, egg and vanilla, add sugar, and beat.

Add almond meal, coconut and salt, mix together.

Pour batter in baking tin and sprinkle almond flakes on top.

Bake for 50 minutes on 180 Degrees oven.
