Egg-less vanilla cup cakes…

7th Feb 2012… It’s Thaipusam day…  Home alone as usual… Reena is coming later after work and we will go to Bala Murugan Temple Perth… As they say an idle mind is a devil’s playground 🙂 Haha yes my mind is already thinking of food food and only food… Well it’s Thaipusam and lets bake egg less cake or muffin… Google is my best friend for quick recipes. Thank you to www.madhurasrecipe.com… They have lovely egg less baking recipes… Finally made up my mind… The Egg less vanilla cupcake looks good… with vanilla icing on top… And of course I have to change the ingredient to my preferences… Vanilla is not always my favorite so changed the frosting to orange flavored… Turned out superb and we enjoyed it for tea before leaving to temple…

Looking forward with high hopes

2011… 365 days are coming to an end soon… Last 12 months has been great good bad sweet sour awesome challenging and memorable as usual… Every beginning has and ending… It’s like watching a new release movie… Lots of expectations and sometimes it’s good or at times fails… yet finally it’s done and we have watched it… so no regret or less regret 🙂 … complains and critics yes that’s human nature… After a while we still wait for another new release… That’s how another new year… One good thing is, it’s your own movie with your choice of actors and actress and locations… Of course some producers, directors, editing and songs slots involved… Enjoy the mixture of life’s colour… 🙂

Windy and chilly Sunday… Good… summer is nearly over… I came back after night shift… Couldn’t sleep… Me, PS and Reena drove around looking for shop to have breakfast…It’s 7… 7.30am no restorant is open in Perth… These are the times we really miss home… Kampar is full of stalls and food every where… Home sweet home… Finally decided to go to market and do our own breakfast… Kuey Teow soup… After a good breakfast me and Reena lazying on the sofa watching TV… trying to sleep… Suddenly this recipe came into my mind… Saw it in one of my recipe books couple of days ago… Now as usual I start searching for ingredient in the kitchen…

Marble cheese cake…. Sort of :)

Just felt like baking something… Reena is with me… she is just back from work… We both had lunch and start thinking what to bake… Was on skype with Uneshini… she wanted cheese cake… past few days she has been telling… Thought we would do it together… mmm yeah me too felt like having a big piece of it… got to watch out for the calories and fat level thou… I have cheese blocks in the fridge… That’s the time my 100 recipes book came handy… Marble cheese cake looks awesome… Takes 2 hours for refrigerate… ok its 5pm now… our cheese cake should be ready to eat by 8pm… what else needed in the ingredient list… Yogurt… double cream… plain and white chocolate… that’s what will make the marble effect… For the base we need rolled oats… hazel nuts… and butter… Now I have to search the cupboard and fridge for the rest of the ingredient or at least close to it as always…

Marble cheese cake

Ingredients for the base

225 g /8 oz Toasted oats cereal

50 g/1 3/4 oz Toasted hazelnuts, chopped (Used walnuts instead… thats what I had in the cabinet)

4 tbsp butter

25 g/1 oz plain chocolate

Ingredients for filling

350 g/12 oz Soft cheese

100 g/3 1/2 oz Caster sugar

200 ml Thick yogurt

300 ml Double cream

1 envelope powdered Gelatine (which I never used)

3 tbsp Water

175 g/6 oz Plain chocolate, melted

175g/6 oz White chocolate, melted

The ingredients are ready… now for the making… Shall start with the base…

Steps for the base

1. Place the oat cereal in a plastic bag and crush ir roughly with a rolling pin.

2. Pour the crushed cereal into a mixing bowl and stir in the chopped nuts.

3. Melt the butter and chocolate together over low heat.

4. Stir into the cereal mixture.  Stir until well coated.

5. Using the bottom of a glass, press the mixture into the bottom of a cake tin.

Steps for the filling

1. Beat the cheese and sugar together with a wooden spoon until smooth.

2. Beat in the yogurt.

3. Whip the cream until holding its shape and fold into the mixture.

4. Divide the mixture in half.

5. Beat the plain chocolate into one half and the white into another half.

6. Place alternate spoonfuls of the mixture on top of the cereal base.

7. Swirl the filling together to give a marbled effect.

8. Smooth the top.

9. Chill the cheesecake for at least 2 hours. until set.

Cekodok Pisang…

Cekodok pisang is a very famous Malaysian breakfast or tea time snack… Reckon this recipe would have been created to use up over riped bananas… not to waste any… eventually now it’s one of all time favorite… Cekodok pisang, that is the what I know it as, is banana ball…

Chocolate chip muffins to celebrate my iPhone 4 and Liverpool jersey…

Today is 20.10.2010… mmm nice… A very nice day indeed… I received two mega gifts… iPhone 4 and original Liverpool jersey… PS ordered iPhone 4 online about 3 weeks ago and was expected to reach after 23rd October… Suppose to be a surprise and I know nothing about it…. This morning I received a parcel… wow it’s iPhone 4… was surprised and of course I don’t know how to handle it at all… I am so used to my old Nokia phone which is so handy and strong… This one is so fragile and sophisticated… PS had to download everything before it can be activated… Vimel was behind all this too… Thank you to both PS and Vimel… will learn how to use it soon… 🙂 Vimel is Veera uncle’s son… They are our family here… 🙂

10.10.10… Anu’s Convocation…

10.10.10 that’s 10th October 2010… beautiful Sunday this year… I wish I am at home now with family… all in KL now because it is Anu’s Convocation at UPM… Graduation happens every year and our kids now are getting richer and overwhelming in education… It is something to be proud of and spoken about in our community… more over when it happens in our own family… it is the happiest moment and pride for the parents and siblings to say that’s my family member getting accredited for her/his studies and hard work today…

Spoke to Jayshraj yesterday… He and Sachievraj were very excited after watching Enthiran… for them it’s fun time… going to KL for something… something is happening and we are going to have fun… They went with Meera, amma, appa and Sitiawan perima for the movie… They all came a day ahead from Kampar to attend Satya akka’s house function… It was a big gathering last night at her place… Thambi and thilaga joined them later… It would have been amazing catching up with family… Missing home a lot… I was at work here in Perth… 🙂

Penang Perima… Buntung Perima… Sujatha akka… they all share the same birth date… 10th October…

My cousin sister Rela was a special one and God loves her more… She was born on 10th October and left us to the all mighty on 10th Oct 2008… She is same age as me… She will be in our heart always…
